HISTORY.
OURS OUR VINEYARDS
We have our own vineyards where we grow various varietal types of grapes, including: Muscat Ottonel, White Muscat, Chardonnay, Sauvignon, Rkatsiteli, Traminer pink, Leanka, Riesling, Cabernet Sauvignon, Merlot, Saperavi, Isabella, Keck Francos, Blauburger, and others.
The area of vineyards is 180 hectares.
To produce high quality wine, we carefully select grapes. The harvested grapes are immediately delivered to the primary winemaking plant and fall into the hands of winemaker Veresh Geizo, for whom wine and winemaking are the meaning of life.
HOW DO WE MAKE WINE?
The stages of the harvesting process will vary in time, technique and technology, depending on the grapes, region and type of wine the winemaker wishes to produce.
But for the most part, each harvest includes the following stages:
1. 1. Growing and harvesting.
Most vineyards start with white grapes, which progress to red varieties. The grapes are harvested in crates or baskets and transported to the crushing facility. Here the process of turning grapes into juice and then into wine begins.
2. The second stage is recycling.
Regardless of when the grapes were picked, they are crushed in the next step.
A destemmer is a piece of winemaking equipment that does exactly what it says: removes the stems and slightly crushes the grapes.
3. Fermentation of grapes into wine.
Simply put, fermentation is where sugar is converted into alcohol.
During this process, many methods and technologies are used to process different types of grapes.
4. 4. Wine aging.
At this point, winemakers have many options, all of which depend on the type of wine they want to create. The flavors in wine become more intense through several winemaking approaches:
- aging period from several months to several years.
- aging containers (stainless steel, oak barrels)
- condition of the container (new oak barrel or previously used)
5. Bottling the wine.
Some white wines are ready for bottling in a few months.
Most dry reds require 18-24 months of aging before bottling.
When the winemaker feels that the wine has reached its full expression in aging, then it is time to bottle the wine for consumption.
